The Starving Chef Recipe: Sweet Potato Marshmallow Cookies

Sweet Potato Cookie Recipe
Technically, you’re eating a vegetable.

This holiday season, I’m making sweet potato marshmallow cookies.

It’s how I imagine sweet potato casserole should be served—as a dessert and not a side dish.

Sweet Potato Marshmallow Cookies

Prep time: 15 minutes
Cook time: 10-12 minutes
Makes: 24 cookies

Ingredients

2 C sweet potato, peeled & cubed
2-3 T water
1 C butter, room temperature
1 C brown sugar
1/4 C dark molasses, warmed
1/4 C honey, warmed
2 T lemon juice
1 T sea salt
1 T cinnamon
1/2 t nutmeg
1/4 t ground cloves
1 t vanilla
1 egg
1 t baking soda
4 C flour
Standard size marshmallows, for topping
Whole pecans, for topping

Here’s How
  1. In a microwave safe bowl, add the cubed sweet potato and water. Microwave for five to six minutes, or until the sweet potato is tender.
  2. Transfer the sweet potato to a separate mixing bowl. Add the butter. Use a hand mixer to whisk the sweet potato and butter together until the mix is light orange.
  3. Stir in the brown sugar, molasses, honey, lemon juice, sea salt, cinnamon, nutmeg, ground cloves, vanilla and baking soda. Add the egg and stir until completely incorporated.
  4. Add the flour, one cup at a time, stirring between each addition until a thick dough forms. Chill for at least one hour.
  5. Preheat the oven to 350 F. Roll the dough into individual balls. Arrange the balls of dough about two inches apart on a baking sheet lined with parchment.
  6. Use the bottom of a flat glass or bowl to flatten the balls of dough to be about one half-inch thick. Bake the dough for five to six minutes.
  7. Remove the half-cooked dough from the oven. Place a marshmallow onto the center of each cookie. Return the cookies to the oven and bake for five to six more minutes, until the marshmallows are golden brown and puffed up.
  8. While the marshmallows are still warm, place as many pecans on top as you desire. Serve in lieu of sweet potato casserole. Enjoy!
