The Starving Chef Recipe: Summer Sorbetto

Watermelon Sorbet
Nothing says summer quite like a frozen treat, designed to be enjoyed while beating the heat of the season.

Beat the summer heat with sorbet. This scrumptious treat combines the refreshing flavors of juicy watermelon, sweet strawberries and a zing of tangy lime.

Summer Sorbetto

Prep time: 30 minutes
Chill time: 6 hours
Freeze time: 8-10 hours
Serves: 8

Ingredients

16 oz. frozen strawberries, lightly thawed
24 oz. frozen watermelon, chopped and lightly thawed
2 T lime juice
2 T honey
⅛ t salt
¾ C water
¾ C sugar

Here’s How

  1. In a large pot, boil the sugar and water over high heat until syrupy, around 30 minutes. Let it cool and transfer to an airtight container. Chill in the refrigerator for 5-6 hours until cold.
  2. Blend the frozen watermelon, strawberries, lime juice, and honey in a blender or food processor until smooth. Add the simple syrup and pulse until well blended.

Option #1:
Use an ice cream maker to churn the sorbet until it reaches a thick and smooth consistency. Transfer it to an airtight container and freeze for 8-10 hours.

Option #2:
Pour the mixture into an airtight container and freeze it for 8-10 hours.

Allow the sorbet to thaw for 5-10 minutes prior to serving to make scooping easier. Enjoy!
