The Starving Chef Recipe: S’mores Cookies

S’mores Cookies
Prep time: 15 minutes
Cook time: 15 minutes per batch
Makes 24 cookies
Ingredients
2 C flour
1 C crushed graham crackers
¾ C sugar
¾ C brown sugar
2 eggs
8 T butter
1 t vanilla extract
Dash of cinnamon
1 t baking soda
1 T sea salt
2 C mini chocolate chips
1 C mini marshmallows
4-8 Hershey’s chocolate bars, broken into bits
Here’s How
- Break Hershey bars into small pieces, refrigerate. Set aside marshmallows.
- Crush graham crackers to a mix of fine and coarse crumbs. Separate the larger bits.
- Preheat oven to 375°F. Mix flour, baking soda, sea salt, cinnamon and fine graham cracker crumbs.
- Cream butter, sugar and brown sugar in a stand mixer. Beat in eggs one at a time, then vanilla. Mix in half the mini chocolate chips.
- Gradually incorporate the flour mixture, adding 1/4 cup at a time until well combined.
- Form dough balls, roll in coarse graham cracker crumbs and place on a lined cookie sheet, crumb side up.
- Bake for 8 minutes. Remove, press reserved chocolate bits and marshmallows into cookies.
- Return to oven for 4-5 minutes until marshmallows lightly brown. Serve warm.
