The Starving Chef Recipe: Sand Dollar Cookies

Indulge in these delicious cinnamon almond Sand Dollar Cookies—a blend of sweet cinnamon, crunchy almonds and buttery dough for a tasty, ocean-inspired delight.

Sand Dollar Cookies

Prep time: 15 minutes
Cook time: 15 minutes
Makes 24 cookies

Ingredients

1 C salted butter
2 C sugar + ½ C for coating
1 egg
2¼ C flour (adjust as needed)
1 T cinnamon + more for topping
1 C slivered almonds

Here’s How

  1. Preheat oven to 350°F. Beat butter, 2 C sugar and egg in a stand mixer until smooth.
  2. Gradually add flour to form a lumpy dough. Adjust dough consistency with more flour or 1 T of water if needed.
  3. Form dough into balls using an ice cream scoop. Roll each ball in a mix of ½ C sugar and cinnamon.
  4. Place dough balls on a parchment-lined baking sheet. Flatten to ½ inch thick using a jar’s bottom.
  5. Press five almond slivers into each cookie to resemble a sand dollar. Bake for 12-15 minutes until puffed and cooked.
  6. Accentuate almond patterns with additional cinnamon. Serve warm or at room temperature.
