Meet Beau’s Market & Deli

Everybody knows Beau. He’s the legendary chef behind Beau’s Grille inside the Hilton Akron/Fairlawn, and Beau’s on the River inside the Sheraton Suites Akron Cuyahoga Falls.
Now, Chef Beau Schmidt has teamed up with two other food, wine and hospitality gurus to bring us Beau’s Market & Deli, which opened in Copley earlier this year in the former Shisler’s Cheese House location on Cleveland-Massillon Road.
“Lots of people were disappointed when Shisler’s closed,” Chef Beau says. “It was a great place to grab a delicious deli sandwich. We wanted to bring something like that back to Copley, but in a bigger way.”
He means in a waaay bigger way.
Enter Rennick Andreoli, the president of RDA Management, which has operated more than 30 hotels, including two of its mainstay local properties—the Hilton and the Sheraton Suites. Jumping on board, too, is Jeff Lynch, the 10-year general manager of the Sheraton Suites, who also served for five years as a wine consultant for Akron’s beloved West Point Market.
The team also includes Christina Lusk, who ran West Point’s cheese department, and in the kitchen is Rochelle Gorman, a culinary mainstay at Beau’s Grille for more than 20 years.
This dream team has transformed the former Shishler’s location into a one-of-a-kind haven for lovers of gourmet food and wine, with a scope reaching far beyond the traditional deli.
More Than a Deli
“We put ‘market & deli’ in the name because we had to keep it short,” Beau explains. “But we’re far more than that. We’re a gourmet market, a restaurant, a wine bar, a martini bar, a caterer, a gathering place, and, of course, a deli, featuring high-quality Boar’s Head products.”
Beau adds that his sandwich bread is delivered fresh from the fourth-generation Cellone’s Italian Bread Co., in western Pennsylvania.
Jeff, whose love and expertise is wine, has stocked the new Beau’s Market and Deli with more than 300 bottles of wine you can purchase to take home or enjoy on the premises for a $10 corkage fee. There are also plenty of wines by the glass on the restaurant wine list.
Rennick’s passion for hospitality and the customer experience means an emphasis on service—from samples of the fresh-sliced Boar’s Head meats at the deli counter to full service in the dining area. “You don’t have to get up and go to the bar to place an order,” he says. “We serve you where you are, whether that’s inside the restaurant or outside at a patio table or on the outdoor sofa.”
The customer experience also includes wine tastings and other special events, plus wine sampling every Saturday. The staff even manned an outdoor grille on Saturdays this summer.
A Full Bar
This new hot spot also includes a full-service bar with beer, wine, liquor, and hand-crafted cocktails—from martinis to margaritas and bloody Marys. “People sometimes equate a deli with just beer and wine,” Jeff explains. “But one of our first steps was to secure a liquor license so we could serve everyone. Some people want a glass of wine while their spouse may choose to enjoy a cocktail. We want to be inviting and welcoming to everyone.”
And because the new Beau’s is open until 7 p.m. on Tuesdays and until 9 p.m. on Wednesdays through Saturdays, it’s an ideal place to gather with friends, family or co-workers in the evening while enjoying drinks, small plates, and enticing shareable platters.
Exploring the Menu
The name “Beau’s” conjures up images of fine dining—steaks, seafood, pasta and even fried mozzarella sticks. But that is not Beau’s Market & Deli. Instead, it features lighter fare perfect for lunch or a light, healthy dinner. “We don’t even have a fryer on the premises,” Beau laughs.
The menu features salads, soups, subs, wraps, sandwiches, small plates, flatbreads and charcuterie boards (more about those in a moment). So, if you’re looking for panko-crusted chicken parm, go to Beau’s Grille inside the Hilton. Instead, here you’ll find salads like the Poke Salad, which is mixed greens, sushi tuna, fresh veggies, seaweed and avocado with a ginger soy dressing, $14.
Subs include the Halle’s Masterpiece—roasted turkey, bacon, rosemary ham, Havarti, avocado, roasted tomato, Mediterranean salsa and arugula, $13.
The Greek wrap features turkey, greens, tomato, onions, peppers, feta, kalamata olives and tzatziki dressing, $14.
The New Yorker sandwich is pastrami or turkey pastrami with Swiss and creamy coleslaw on marbled rye, $12, while small plates (order several and share with a friend) include the Hummus Du Jour—lemon, garlic, tahini, olive oil with pita and crudités—and Smoked Salmon, which is arugula, cucumber, capers, egg, onion, olive oil and pita, $12.
Charcuterie Boards
Now, about those charcuterie boards. The menu features one, which arrives with a selection of specialty meats, cheeses, jam, coarse mustard, olives, nuts, house marmalade, and warm pita, but you can also order custom charcuterie boards for your own dinner parties, holiday gatherings, and gifts, $19 small/$29 large.
“Our charcuterie boards have become a huge hit,” Beau says. “Unlike many hot entrées, they travel well and can be enjoyed whenever you and your guests are ready. Plus, they are absolutely beautiful. You can pick them up or we are offering catering service for 10 or more guests.”
For charcuterie boards and other catering, please give the staff 24 hours’ notice.
The catering menu is packed with salads, deli trays, sandwich trays, boxed lunches, and picnic trays. “Picking up a tray to take to Blossom or to Wolf Creek Winery has been really popular this year,” Beau adds.
The Market
The gourmet market is the perfect place to stop for dinner ingredients or party ideas. It features sauces—including pasta sauces, specialty hot sauces, and BBQ sauces—pasta (like Rustichella d’Abruzzo and Bona Furtuna), gourmet spreads, aiolis, tapenades, olive oil, crackers, nuts, chips, jam, gourmet spreads, Copley Popcorn, condiments, pancake syrups, and more—much of it from local sources (like ice cream from Medina’s Waylon’s Handcrafted), as well as the popular Stonewall Kitchen brand.

Weekly Specials
If you’re looking for a deal, try the wine sampling every Saturday. “This gives you the chance to taste many different wines for just $1 per 2-ounce sample,” Jeff says. “And on Wine Wednesdays, there is no corkage fee on bottles bought at the market and enjoyed onsite, along with a buck off all glass pours.”
In addition, happy hour is Tuesday through Friday from 3-6 p.m. with $1 off all drinks.
