Mmmmm.... Bacon!

I have to admit that I was more excited than normal about my Fresh Fork food when I found out that a pound of bacon was included.  I knew that bacon from Fresh Fork was going to be better and fresher than the bacon I typically get from the grocery store and I wanted to make something special with it.

Veggies Galore!

When I picked up my Fresh Fork Bag last week I told Trevor (owner and founder of Fresh Fork Market) how excited I was about the giant eggplant that was in my bag.  I explained that I love eggplant, but my husband doesn’t, so my challenge was going to be to find a recipe that he actually liked.  Trevor recommended ratatouille and who am I to argue with the expert?

Whoo-hoo! A couple of great things happened this week, all related to my workouts. First, I was able to carry a VERY heavy fountain from the far reaches of my basement to the first floor of the house. Two months ago, I couldn’t move it 12 inches!! Then, I saw my Mom for the first time in about 6 weeks and she commented not only that I looked thinner but that I looked much more FIT.
I am now two months in with Overload. I have to say I am really looking forward to workout days now. It has become part of my routine.  While the workouts are difficult (really difficult) the time is short, usually only 20 minutes or less, and the results are truly amazing. T ...

Every Vacation Has to End

Last weekend I went on vacation with a friend and left my husband or son at home.  It was wonderful!  I relaxed, shopped, stayed up late, slept in, and then shopped more.  Oh, and besides breakfast I didn’t cook anything.  When I returned I was happy to see my family again, but the week has been slightly chaotic as we all played catch-up with our routines. 
When I got home late on Monday I didn’t feel like cooking, so we ordered some pizza.  Tuesday I just couldn’t admit my vacation was over and step into the kitchen, so my husband brought home take-out.  Wednesday, I finally tired of eating out and grabbed an arm ...

So Sweet

This week fruit ruled the menus in my house.  The first thing I made with my Fresh Fork food was an Upside-Down Peach Cake.  You may be able to tell by the name, but this recipe is similar to Pineapple Upside-Down Cake, only better because I like peaches better than pineapple. 
This cake is meant to be served warm, so after it came out of the oven I rushed it to my cousins housewarming party where I could share this delicious dessert before I ate it all myself.  The peaches were so good and the cake tasted like summer.

Resale shops; a mom's best friend!

I have always gotten a little thrill when I went shopping and found a great deal. Since having twins and becoming a stay at home mom, the deals I used to find have now become a necessity. Especially with as fast as 2 little girls grow!
At first it was a quick sanity escape when my husband came home from work to drive over to Children's Orchard, a children's resale shop in Brunswick Town Center. Everyone there was always so nice, asking for updates on my 2 little preemies and to see the latest pictures.  Of course I, a proud sleep-deprived mom, always had some on hand.
